Mermaids Bakery

I'm so glad we went with Mermaid's bakery for our wedding cake! Diane was so excited when I told her I wanted a mad hatter style cake. The look was fantastic and to this day, whenever anyone sees a picture of the cake, they always want to know who made it! Diane also help us with cost as she made our cake large enough to feed half the guests and a sheet cake for the other half. The chocolate, fresh strawberry, and vanilla filling sheet cake, I was told, was delicious and moist. The keylime with fresh raspberries was amazing and my husband and I both went back for a second piece! The only issue I had was with Turtle cake, which was the top tier. We had to dig around to find the nuts and you could hardly taste the caramel. I wish there had been bigger hunts of nuts and caramel in the cake. I also had a german chocolate birthday cake made for my husband 6 months before the wedding and that was FANTASTIC! The only real downside was that Diane sent us a blank contract, rather then filling everything. Fortunately my wedding planner took care of that. I would definitely recommend Mermaids Bakery for any future bride!

Taste--We chose this bakery due to their ability to make gluten-free cupcakes taste, well, not gluten-free. I will give them 5 stars for that. Their cupcakes are delicious, and generally speaking, quite cost effective. They are absolutely amazing and everyone ate more than one. Red Velvet was a must. Now on to the less than 5-star ratings...Service-- The bakery is busy, and I found myself having to double and triple check my order with them. They are a bit scatterbrained, and I wasn't confident that we were speaking the same language when it came to decorations, flavors, etc. I even emailed pictures of what I wanted, called to confirm, but didn't get exactly what I had hoped for upon delivery.Professionalism-- All of my other vendors were organized and left me to be a worry-free bride, however, not knowing the outcome of the cupcakes left me a little unsettled, not to mention never receiving an invoice, being over-charged, and little add-ons that kept upping the overall cost.Flexibility-- They are fairly flexible as long as you can pick up your own cake/cupcakes. That's right. The morning of your wedding, you can come and get 'em. They do offer a delivery service, but I was told that my venue was out of scope ( a 25-30 min drive for them). So, after a plea and an additional $60, they were able to make it happen. Funny thing, upon arriving at 2pm on our wedding day, my cupcakes hadn't even been decorated yet, so I wonder what would have happened if I had picked them up at 9am as planned? The extra time seemed to be needed.

I WOULD NEVER RECCOMMEND this bakery for a wedding!! I went with Mermaids Bakery because it was on of the few bakeries that did tres leche flavor. The first tasting was good. I didn't have the flavors I picked for the wedding which with our e-mails I thought she would prep tres leche cupcake. Diana was very nice and seemed excited for my wedding theme being about movies. Well on top of HAIR being found on one of the cupcakes, my cupcakes were not how they were told they were going to look, she was frazzled and using excuse after excuse. To top it all off my top cake was the wrong cake flavor. SO after my wedding to get a meeting with her to talk about my wedding cake was impossible even when I told her my cake was the wrong flavor she had the nerve to ask me if I was sure, very unprofessional.

I am so happy to leave a great review for Mermaids Bakery...the cake that they made for our wedding day was AMAZING! Not only did it taste wonderful (we did part vanilla with lemon cream and chocolate with chocolate cream/chocolate chips) but it looked funky, fun and dramatic! Diana put together great decorations to top it all off (feathers, roses, beads, etc.). It is hard to describe how cool the cake looked...definitely unique! Thank you so much and we will always recommend you!=)

I wasn't sure what to expect from Mermaids, as I relied pretty heavily on reviews to choose vendors and hadn't seen any regarding Mermaids' wedding cakes. I was also nervous because I had called several times to confirm the details of what I had ordered and to confirm delivery timings, and frequently I felt like the person on the phone had no idea what they were doing. The cake and cupcakes showed up on time though, and were tasty. Cake could have been a little fresher, but was overall good. The price cannot be beat.
